About this item
Lapsi is the Nepali hog plum, and there is no European fruit that stands in for it. Sour in a way that is almost sharp, then sweet underneath, and it holds the mustard oil and the timur without going soft.
Made the way it is made at home: fruit, mustard oil, timur, chilli, salt, a little sugar to round it. Sour arrives first and the heat comes afterwards, which is the point of the thing.
Eat it as an achar on the side of dal bhat, a teaspoon at a time — it is a condiment, not a chutney to spread. Keep the jar in the fridge once it is open and use a dry spoon; the oil is what preserves it, so do not pour it off.
