About this item
The same idea as gundruk, done with radish ROOT instead of leaves, and sharper for it.
The root is shredded, packed tight and left to ferment before it is dried, and what comes out is more sour and more assertive than gundruk. In a winter soup with a little tomato and timur it is one of the best things I know how to make, and it will absolutely wake up a plate of plain rice.
Soak it, squeeze it out, and use it as you would gundruk — but taste as you go, because it is stronger. Keep it dry and closed.
