Fried on the Saturday morning you collect it, and that is not a slogan — sel roti has a window of a few hours where the outside is crisp and the inside is still soft, and after a day it is a different and much sadder food.
Rice flour batter, ground and rested overnight, sweetened lightly, poured in a ring into hot oil by hand. No baking powder, no shortcut: the lift comes from the fermentation and the pouring.
Six pieces. Eat them the same day if you possibly can, with tea in the morning or with aloo achar. If you cannot, they freeze better than they keep — freeze the same day and warm them in a dry pan, never a microwave.
Contains rice flour, sugar, ghee and milk, and it is fried in oil that is also used for other sweets.
