About this item
Ground at home in small batches: cardamom, clove, cinnamon, a little black pepper. That is the whole list, and there is nothing else in it — no filler, no sugar, no colour.
A pinch per pot, added with the ginger while the water is still cold so the spice has time to get out of its own way. Start with less than you think. Masala is meant to sit behind the tea and the ginger, not in front of them, and it is easy to make a cup that tastes like a candle.
50g and no more, for the same reason as the ground cardamom tin: ground spice fades. Use it within a few months and grind is not a compromise — it is just convenient.
