About this item
The spring picking, taken from the Ilam gardens around Fikkal when the bushes wake up after winter. Light, floral, a little green at the edges, and the most delicate thing on this page.
Orthodox processing is what makes it possible: the leaf is rolled whole and gently rather than chopped, so a brewed cup unfurls into recognisable leaves instead of dust. It also means a small harvest and a short season, which is why first flush costs more than the summer leaf and runs out first.
Brew it as if you were afraid of it — water off the boil, three minutes, no milk and no sugar. Milk would bury the whole reason to buy it. It will take a second brew from the same leaf, usually a rounder one.
