About this item
Timur is Nepali Sichuan pepper — the small husks that make your tongue buzz — and it is the one spice you cannot fake with something from a German supermarket. Whole, so it keeps; toast a teaspoon in a dry pan and crush it just before it goes into the tomato achar, the chhoila marinade or the aloo. Fifty grams is a lot of timur, because you use a pinch at a time, and it holds its numb for a year in a closed jar out of the sun. Ground timur that has sat in a packet since spring does nothing at all.
