Every garam masala in a German Asia shop is somebody else's: the Nepali one leans on black cardamom, timur and cinnamon rather than on clove and mace, and it goes in at the end of a curry rather than the beginning. This is that one. A teaspoon stirred through a mutton or chicken curry two minutes before it comes off, or over the tarkari. Ground, so it fades — buy the 100g, use it, and buy another, rather than keeping a jar for two years.
