About this item
Jimbu is a dried Himalayan allium — a wild chive from the high valleys — and it is the smell of a Nepali kitchen at dinner time. You do not cook with it so much as finish with it: a pinch dropped into hot ghee for five seconds and poured over the dal. Twenty grams is months of dal. It is light and it is fragile, so I pack it in a tin, and I only get a little of it each time, which is why the shelf count is low.
