About this item
Ghee is what dal is finished with and what sel roti is fried in, and it needs no fridge — a closed tin on a cool shelf lasts months, which is why every Nepali kitchen has one. This is cow's-milk ghee, made from cream rather than from butter, which gives it the nutty, slightly grainy texture of the real thing rather than the flat taste of the supermarket jars. Half a kilo is a household's three months if you cook with it, or a fortnight around Tihar. Dairy, obviously.
