About this item
Mustard oil is the cooking fat of the plains and the base of every achar, and there is no substitute: rapeseed oil looks the same and tastes of nothing. This one is cold-pressed and pungent — it should make your eyes prick when you open it. Heat it until it just begins to smoke and let it cool a little before the spices go in; that takes the raw edge off. A litre does a family a month of ordinary cooking plus a few jars of achar. Keep it out of the sun.
